Ingredients:

MASCARPONE 225g
Water 140gm
Nescafe Classic 1.5 tbsp
Coffee plus rum liquor 1.75 tbsp
Soaking Sponge
Cream of tartar 1/4tbsp
Soaking
Step 1 : Layer sponge on bottom of vessel
Step 2 : Soak sponge.
Step 3 : Chill sponge for 20 mins.
Cream
Step 4 : Separate egg into white and yellow part.
Step 5 : Add sugar and two egg yellow and beat until white.
Step 6 : Add mascarpone
Step 6 : Whip until incorporated. Don't over whip.
Step 7 : Mix will get denser once you have whipped
Step 8 : Do not split
Step 9 : Add half tbsp cream of tartar powder to egg white and beat till soft peaks.
Step 10 : Gently fold egg white mix into yellow mix.
Finish
Step 11 : Pour cream on top of sponge.
Step 12 : Cling wrap vessel and chill for 6 hours.
Step 13 : Top mix with Morde cocoa powder.
