Loaded Vegetable Sandwich

Ingredients:

Chickpeas (boiled) 15 g
medium Beetroot (boiled and diced) 1
Garlic Cloves 3 Pieces
Dr. Oetker FunFoods Veg Mayonnaise De'lite (4 tbsp) 60 g
Salt
Multigrain Breads (slices) 2
Mix Lettuce leaves 30 g
medium Avocado (sliced) 1
Medium Radish (sliced) 1 Piece
Carrot (cut into thin strips) 1 Piece

 (1). Hummus- In a blender jar add chickpeas, beetroot, garlic, 2 tbsp mayo and salt. Blend for 1 minute or until smooth paste is formed.

(2). Assembling- Spread remaining mayonnaise on both the bread slices. On a bread slice place few lettuce leaves, spread hummus, top it up with avocado, radish, carrot and remaining lettuce leaves. Cover it with the other bread slice and serve.
