Eggless Carrot Cake

Ingredients:

Raj Breakfast Sugar 150 gms
Raj Baking Powder 1.5 tsp
Private: Cream Cheese 110 gms
Raj Icing Sugar 200 gms
Milk 90 ml
Vinegar 5 ml
Vanilla Essence 4 tsp
Vegetable Oil 120 ml
All purpose flour 140 gms
Salt small pinch
Baking Soda 1/2 tsp
Nutmeg small pinch
Cinnamon 1/4 tsp
Powdered clove 1/4 tsp
Carrot (grated) 200 gms
Walnut (chopped) 70 gms
Step 1 : Preheat your oven to 180*C.

Step 2 : Add vinegar to the milk and keep it aside for 5 mins.

Step 3 : Whisk together oil, vanilla and sugar, pour in the curdled milk.

Step 4 : Whisk till the sugar melts.

Step 5 : Add in the flour, spices and baking soda &powder. Give it a good mix.

Step 6 : Add in the grated carrots and chopped walnuts, mix till it’s all well combined.

Step 7 : Add this to a greased mould and bake for 25-30mins or till the toothpick comes out clean.

Step 8 : Soften the cream cheese, add in butter and whisk this well

Step 9 : Add in the powdered sugar in batches, add in vanilla essence.

Step 10 : And whisk till it’s not grainy anymore.

Step 11 : Let the cake cool completely and then frost it.

"Step 12 : Garnish with walnuts, carrots and mint.
